The way we produce, process and package food accounts for more than one-third of global greenhouse gas emissions. Leading climate scientists have warned that without drastically changing our food consumption habits we won’t be able to meet the nutritional needs of a growing world population without irreversible environmental damage. A winning strategy is to eat less methane-generating meat and dairy, eat cleaner whole foods produced without fertilizers from fossil fuels, minimize food waste, and eat locally to reduce transportation emissions. Collectively, these measures will help slow down climate change. In your own community, you can support locally owned family farms by joining a CSA or food cooperative and shopping at your local farmer’s market.
